Nogaredo (Trento)
The collaboration with the Marzadro Distillery of Nogaredo (Trento) has resulted in a very high quality product: Amphora, a grappa made from a blend of pomace from Trentino vines and refined in Tava amphorae. The main challenge was to identify the ideal porosities for the aging of the distillates, which are very different from wine in terms of alcohol content and density. The result we obtained was very satisfying: the aging in amphora maintained all the qualities of traditional aging of grappa in terms of smoothness, taste and aroma, but without the classic essence of wood resulting from aging in barrels.
