Tava, amphoras for vinification and aging

Located in Trentino, the Tava company has been producing ceramic products for three generations. Over the last few years, using the advice of winemakers and wine producers, it has created a range of amphorae for winemaking and refining.

Starting from the traditional production of amphorae present in Italy, Spain and Georgia, the company has developed an amphora that, with respect for tradition, through new construction solutions, is able to guarantee an ideal means for conducting oenological processes. The use of clay as a material for the production and conservation of wine, as well as having very ancient roots, starts from some characteristics typical of ceramics.

The porosity of the clay

The natural porosity of the clay allows to oxygenate the content of the amphora in a similar way to the characteristic exchange processes of the wood without however making any organoleptic cession. This ability to oxygenate can be varied according to the needs of the wine maker by acting on the cooking temperatures of the amphora.

Thermal inertia

The thermal capacities of the clay make it possible to overcome some problems typical of steel containers, in this case we can compare the amphora to the concrete containers on a thermal level.

The closing system

A difficulty that has always been linked to vinification in amphorae is that of a closing system that guarantees the tightness of the container. At the TAVA laboratory a closure has been developed that, in addition to guaranteeing the tightness, not using metal elements, allows maintaining the thermal characteristics of the amphora.

The thickness of the materials

A lot of attention has been devoted to the research of materials and their thickness. Traditionally the amphorae were buried to accentuate the thermal characteristics. Through the analysis of the various cleaning and sanitization methods it has been demonstrated that the practice of landfill for a logistic question does not guarantee that the sanification processes can be carried out correctly. The solution to this problem has been to increase the thickness of the amphora to ensure the thermal seal without the need for landfill.

 

The common thread of the whole project is to adapt the amphora to the different types of grapes and to the different wine-making practices, this idea must necessarily pass from a close collaboration between the cellars and the amphorae producer who can develop in this comparison an increasingly effective product is always more effective.
